He began the argument with the question "now is it possible to cover the world with water?" then he states "well, theoretically one drop of water would cover the world". Do you mean to tell me he was addressing the question of whether is it possible to cover a small scale globe? And a layer of ice was possible? Get an education.

It is worth noting that it is often very hard to detect clip removal. Just watch Thunderf00t's video 'venomfangx admits defeat'. Thunderf00t has successfully created a believable clip of Venom saying 'I believe in evolution'.

Good video editing can be hard to detect, but in this specific clip Hovind was moving about, so it should be damn near impossible to cut out a scene without anyone noticing.
